A light dinner for a hot Atlanta night - less than 30 minutes, under $10 per serving.

Salmon – marinated with McCormick’s new Grill Mates Salmon and lemon (marinated overnight, but a few hours would be fine)

Summer Bounty Salad – modified a recipe from Delementals blog. After calculating the calories for the original, I saw that this very healthy looking salad was around 800 calories. Knowing the whole salad would be split into 2 portions, I wanted to cut down the calories so it wasn’t 400 calories per serving.

Adapted Recipe:

  • 2 Ears of white Corn; kernals removed from cob (About 2 cups) – 1ear of corn
  • 3 tomatoes; diced (about 2 cups)
  • 2 small Cucumbers; quartered and sliced (about 1 cups) – 3 medium cucumbers, about 2 cups
  • 1 Avocado; cut in to 1/2″ pieces – 1/4 avocado
  • 1 lemon; juiced
  • 3 cloves garlic; minced
  • 1 small onion; finely diced (about 1/2 a cup)
  • 1/4 cup Cilantro; finely minced
  • 2 tbs Good quality Olive Oil juice from veggies is enough to not need oil
  • 1/2 cup Finely Grated Parmesan Cheese – 1/4 cup parmesan
  • Kosher Salt to taste

Directions

1. Chop all salad components and mix.

2. Heat minimal amount of olive oil on medium high until pan gets hot. Add salmon, cook 2 to 3 minutes on each side, or until done. Serve with salad.

With the 4oz. serving of salmon and the salad, the meal was about 420 calories per serving.
